Is there a specific reason why someone would play Hold'em with two monitors? I know this sounds a bit strange, I need this for smth specific. My question is basically is there a reason why someone playing hold'em would be more comfortable using two monitors? Thanks!

Its for people who play a lot/professionally generally and sometimes they will have more than two monitors as they can tile more tables. Many Pros can handle 24 plus tables at a time. Nanonoko was famous for this but now handling so many tables is standard for many pros.
