Default controlling pot size

I think here I should have either raised to $3+ pre-flop or just called. I think the flop bet was ok, but I should have slowed down on the turn. The pot got super big and I lost all control of it.

Either check or raise more. With $1, your only inflating a pot OOP. $3 seems fine. After the 8 pairs on the turn I shut down. Probably check-call and look at a river.

In PL, with early limpers, limp along with Jacks for set value or raise it up to around $2 and proceed depending on the information you receive. Whether you raised PF or not in this case, you didn't isolate. So treat it as you would if this were a multiway pot. The pot's too big to bet, IMO. If you had limped, you could 2/3 or pot the flop. Those are 2 options to control the pot and get information.

Your cutsy PF raise was not making the price of poker go up. It was just a pot sweetener. You're OOP, so check preflop.

BTW, hands like these are why I hate full ring Hold 'em.
