Aces versus a donkey, I usually bet both flop and turn with an overpair. How do I know I should slow down? This was a bad beat, but if I am up against a set or something, are there any rules you guys go by when playing overpairs?

You played it fine. You controlled the pot-size to the point where he couldn't raise you at any time without a flush, IMO. I know some PFO'ers like to get more aggressive on these turns OOP with bigger probes and they make good points on it, but without being results oriented, I don't see how he can raise you without a flush. He'd have to know where the Ad and Kd are from your PF play.
