Haven't got any actual hands to show you but what do you do in these situations:
You have K8 for example
Flop comes:
278
You hold TP resonable kicker and you are first to act.
What do you guys do knowing that the turn card could be higher than an 8 and then leaving you not knowing where you stand?
I have been betting big in these situations and forcing people to fold and settling for taking whatever is in the pot at the time?
Am I playing this correctly?
I appreciate it is difficult to say as there is no blind info or chip counts but any help would be great!

Depends a lot on the situation. In a 10 handed cash game you should never be playing K8 anyway.
Maybe in a shorthanded game or near the end of a tournament you would be playing a hand like this, in which case I would say bet big as you are right a card higher than 8 is likely to fall. But also be prepared to let the hand go.

The reason for this post is because I am having alot of trouble making in from just getting into the cash to getting to final tables. These hands are coming up on the blinds etc and limping in but I just seem to not want to go broke at that stage when I have invested so much time into getting into that position in the first place! I have won 3 tourneys on VC in the last 2 weeks but have cashed over 15 times in the same period. Just feel need alot of help in getting down to the big money!!

Well, assuming it's just a bunch of limpers and you complete the SB or check in the BB, I'd bet out my top pair just about every time. Bet somewhere between 1/2 - 2/3 the pot, with a very occasional bet that is smaller or larger than that range.
We're betting to take the pot down now and also for information. If we get raised, I'd likely fold most of the time. Pair of 8's with a K kicker isn't anything to write home about if you've got a good sized stack.
