Agreed. When you don't know much about your opponent, I think it is reasonable to assume that they will raise preflop with quality hands and lead/raise on later streets to protect hands they believe to be in the lead. But when you know something about your opponent, you have to adjust your thinking about what his actions mean, and this can certainly affect your decisionmaking throughout the hand, including whether to bet the river for value.
One other comment: as you can probably appreciate, there is a big difference between tournament play and ring play. Your opponent in the $1/$2 NL ring game may have waited all night for aces and decided that he wasn't going to waste them to win a minimum raise and the folded blinds. Plus, one of the major objectives of raising preflop with aces (aside from betting for value) is to narrow the field down to one caller, the situation where aces play best. You accomplished that for him with your minimum raise. The board then developed in a way that prevented him from getting too aggressive, and he ultimately couldn't bring himself to laydown these two cards. Whether he would have played this hand the same way in a tournament is doubtful, where the penalty for misplaying your premium hands is the end of your tournament life.
