Marm beat me to the punch on this post. Look for huge overlays - that is, when the amount of guaranteed $ is greater than the sum of all the buy-ins.
So if you play a $2000 guarnateed tournament with a $20+2 buy in, they would normally need 100 players to make the guaranteed $. Just based on your odds, you're then 1:99 to win the tournament, and start with just 1% real money equity.
If on the other hand (this is an extreme example to demonstrate the point), you're in that same tourney and there are only 50 players, you now start with 2% equity and are 1:49 to win the same amount of $.

I don't think ever seen a MTT on either PS or UB where there have been less players than are necessary to fund the guaranteed prize pool. Are there sites out there where this occurs regularly?

Big MTTs are super if you can take the inevitable deserts between very big wins.
As already said Rebuys are a great way to get value for money. The $30/3 Rebuys on Party have a lot of dead money. Providing you don't get silly making the money is relatively straightforward with a shot at a huge payout relative to stake.
