Basically, you collect +EV when you make correct decisions and -EV when you make incorrect decisions regardless of the results. In other words AA vs 55 is 80% in favor of the aces which means in a $100 pot your EV is $30 assuming you both contributed $50 to the pot. The 5s are -30 EV and not -50 EV since they still have a 20% chance to win.

Lets rephrase the above example a bit.
-You go allin preflop for $50, opponent calls $50. You have AA with an 80% chance to win, against his 55 with a 20% chance to win.
-The difference of 80%-20% is 60%, this is known as your equity edge.
-So you take 60% of $50...BAM, +EV by $30.
You can do longhand too...
20% of the time you lose $50 = -$10
80% of the time you win $50 = +$40
