Yeah I know they're not any easier to beat, I'm just amazed lately how many hands I either shouldn't have to worry about being out there or "probably aren't" actually either are or turn up by the river.

Poks listen, you want to play in these games.
When people mean that second pair is often a big hand in 6-max that is because often the flops are very often heads-up against aggressive/over-aggressive or at least semi-aggressive players.
Look at it this way in a full game with 4 players to the flop you hold middle pair with a medium kicker how do you play it? Because you should be playing it the same way in 6-max, it is the same game just with somewhat fewer players so hand value increases a little not dramatically. In fact you'll probably be getting more players to the flop in 6-max so you'll usually need an even better hand.
Try to treat the games more or less the same, just remove UTG, UTG+1 and MP1. When you are UTG in 6-max treat it like MP2 in full ring with everyone having folded to you, and play accordingly. Also you can classify the players somewhat differently, alot of them will cold call your raises and have position on you after the flop. Therefore you will need decent opening hands.
Marm is completely right if you can't narrow the field with your raises, raise base on equity.

I think that your TT hand you posted earlier is an example of over-doing it, you raised PF which is good, bet the flop and turn with one over. But you really need to get to a showdown with 3rd pair when you still have multiple opponents in the pot.

Here's where my "problem" lies, I never know when I may or may not be missing river value bets. I feel like I'm flipping a coin most of the time...when I check I win and should've bet. When I bet I'm behind and I should've checked. Maybe I should almost always stay on the safe side and check the river if I have the opportunity to?

Nooooo.... If you have a hand that you bet the turn, then you are probably good enough to bet the river.... Of course, there's a lot of implied If's in that.
