I hadn't been at the table long but the villain in this case, from what I had seen, seemed to be super aggressive. I had not seen him showdown a hand, however, and for all I know he was just getting some solid hands.
That being said, in hindsight (which is where I seem to play my best poker) his overbet should have seemed suspicious. That coupled with the fact that my small raise may have looked like a positional one, perhaps I should have called or pushed all in?
What would you do? (Be sure to check out his hand, he showed it after I folded.)

If I was under the suspicion that he was super-aggressive I would've gone over the top of his raise. However, you said you weren't sure so you can't be faulted for the laydown I don't think.

Judging by your read you can probably come back over the top, but I don't fault you for your laydown. Even a maniac could have AA-JJ here. Although the huge overbet looks ridiculous I have seen a lot of players who do this with big hands.
Lay it down and move onto the next hand, if he's this much of a maniac it won't be long before you get another chance to take his money.

20 hands later I pick up AA in the CO and the villain is in the BB. I make the exact same raise (3bb) and he again comes over the top of me with a ridiculous raise. I just flat call. Flop comes QQ6 and he bets hard. Again, I just call. Turn is a blank, villain pushes all in and I call. My AA beats his K8s and he leaves as soon as we showdown.

That's gotta sting, but as long as that's how you play and it wasn't a "tilt" laydow...you know, like you get p!ssed off he raised and angrily fold...I think it was fine.
Check these stats for wired 10s I have (Only for Limit games though). I don't hesitate to fold them now:
