PE is (I believe) a screen grabber program, where it looks at your screen, and then submits your cards to a central server, where if anybody else is at your table using PE, you can see their cards, and they yours.

But yeah, gryff, the server is the only thing that should know all the cards in play. And if they use a pre-queued deck, then it may be possible to hack that too and know what the board cards are, but most sites don't.
