in a nutshell i suppose you could define "outplaying" someone postflop as making them play differently than they would if they could see your cards.
whether that means them bluffing into you when you have monsters, calling down with worse hands without proper odds, folding the best hand etc. links in to what's been said above.
i would say one of the most important things is knowing what you are going to do later on in the hand. before you make a bet you should know how you'll react when called/raised and how the cards on the next street will alter your line. if you bet and then say "i have no idea what to do" when they raise then maybe you shouldn't be betting in the first place.
